The initial purpose of jam was to preserve fruit. Fruit is cooked to reduce its water content, with a large volume of sugar to create a sweet food product that can be preserved for a long time. Over time, demographic changes, advancements in production and distribution technologies, and consumer preferences and dietary changes have resulted in less demand for high-sugar food products. In 1970, we developed “Aohata 55 Jam”, the world’s first low-sugar jam without preservatives or artificial colors.
